Vegan Caprese Pasta Salad
This is one of those recipes that you will KEEP coming back to! Why you ask? Because this vegan caprese pasta salad is not only simple, but it’s PACKED with delicious flavor. I’ll be having it on repeat, no matter the season. Let’s dive into it!
Caprese Pasta Salad Specifics
These ingredients are super simple, and you get to get in a ton of fresh herbs, which are packed with nutrients! Let’s dive into what you will need, and my recommendations:
- Pasta: Of course! I used a Banza Chickpea Pasta so that I could pack in some protein into the meal, which I always love to do. You can use any pasta that you prefer!
- Mozzarella: Whether you’re going vegan here or not, I do recommend a mozzarella block or wheel so that you can get nice hunks of it in the pasta salad. I personally love Miyoko’s Vegan Mozzarella cheese wheel and it tastes INSANE, which you can find at Whole Foods!
- Cherry Tomatoes: I love getting a variety of colors here, but you can use any tomatoes you have on hand – just be sure that they’re diced into small, bite sized pieces.
- Fresh Herbs: Don’t skimp on these! Not only does it add a nutrient dense punch and gorgeous color to the pasta salad, but it’s also amazing for the flavor.
- Oil: We use extra virgin olive oil in this recipe, which has SO MANY amazing health benefits. It’s a superfood, IMO and packs anti-inflammatory benefits, and so much more!

Ingredients
- 1 box protein pasta, cooked & cooled
- 1/4 c extra virgin olive oil
- 8 oz. vegan mozzarella, diced into small cubes
- 1 c cherry tomatoes, diced
- 2 tbsp fresh basil, topped
- 2 tbsp fresh parsley, topped
- 1 tbsp dried oregano
- 1 tsp crushed red pepper
- 1 tsp garlic, minced
- Salt & pepper, to taste
- 1 tbsp balsamic glaze, for topping
Instructions
Caprese Time!
- Cook pasta according to box directions, then allow it to cool and place in a large bowl. Mix in olive oil with pasta and toss.
- Add in the cherry tomatoes, mozzarella and seasonings/herbs and toss well.
- Garnish with balsamic glaze drizzle, fresh herbs and enjoy!
